Today, we are adding bun and some other condiment for our patty. So it can be call as a burger.

But first the ingredient for the Tropical Exotic Patties had some adjustment.

Tropical Exotic Patties
Main Ingredient=

  • Chicken breast 100 g
  • Tender loin 200 g
  • Garlic (chop) 3nos
  • LP sauce ½ cup
  • HP sauce ½ cup
  • Parsley flakes 2 tbsp
  • Mint flakes 2 tbsp
  • Salt to taste
  • Black Pepper powder to taste
  • Mozzarella 1 packet

Salsa=

  • Onion (diced) 3nos
  • Ripe Mango (diced) 3nos
  • Bird eye chili (chop) 5nos
  • Lime juice ½ cup
  • Cilantro (chop) 3 stalks
  • Asparagus (sliced) 1 packet
  • Salt to taste
  • Black pepper powder to taste

Batter=

  • Egg 4nos
  • Bread crumbs 250 g

Method
First of all marinate chicken and beef with Garlic, LP sauce, HP sauce, Paprika powder, Salt, Black Pepper powder. Let it marinate for at least ½ hour to make the ingredient to get in the meat. In the mean time, prepare the salsa ingredient. Prepare a pot of boiling water, add in salt and then blanch asparagus. After that mix the entire salsa ingredient together and placed aside. Next, blend the marinate meat ingredient and then make sure the meat is blend finely. Take a round mould place on a smooth surface, then take meat and flatten in the mould. After that take the salsa and place in the mould, follow by the meat again. Making sure the meat covers the salsa and then steam the meat for a few minutes (note: don’t make the meat to thick and don’t steam so long or else it will turn out hard). Once steam placed the meat in the egg batter and then sprinkle bread crumbs on the nugget. Make sure to bath in the batter for two times, so that the outside texture will turn out crispy. Lastly, deep fry the patties until it turn golden brown.


Ingredient for burger=

  • Lettuce
  • bun
  • tomato slice
  • mayonaise
  • chili sauce
  • Tropical Exotic Patties
  • butter

Method

Toast bread, then spread some butter on the top and bottom of the bun. Add lettuce follow by tomato, then patties. Drizzle chili sauce and mayonaise on the patties before putting the top of the bun.


Today task=


We did what we usually do preparing all the product and ingredient, and start our task. But what the changes for our patties todat is by adding coriander leaf in the salsa. Also the marination is the same except today we add more herds such as parsley and mint. After preparing the patties we prepare the burger using the ingredient which we have. Which are lettuce, butter, patties, bun and tomato.

Well we found out that using bun seems kind of boring and nowadays you can easily find burger selling on the street. The look of the burger is satisfying, but you can see that the size is also big and we cannot add to much of filling because it will make it to large. Catch us next week which we be using tortilla.

Tropical Exotic Patties

Main Ingredient=

Making sure the meat covers the salsa and then steam the meat for a few minutes (note: don’t make the meat to thick and don’t steam for too long or else it will turn out hard). Once steam placed the meat in the egg batter and then sprinkle bread crumbs on the nugget. Make sure to bath in the batter for two times, so that the outside texture will turn out crispy. Lastly, deep fry the nugget until it turn golden brown.


Today what we did....

We started our day by cleaning the meat and poultry. Then straight to marination, marinating it for at least 1 hour so that the meat will taste great.

In the mean while.....

We do some preparation, and also some adjustment in the imgredients. We used mango which is our best choice. But first mien-plus is very important, being prepared early is to stay efficient.

After all the ingredient is prepared, we mix the salsa ingredient with some mango, shallots, bird eye chili, cilantro and some lime juice.

After 1 hour....


We continue our long journey to make our Tropical Combo Patties. These are the steps of making the patties. First we place a mould then add in meat, followed by adding some cheese and then salsa. Then add in meat again covering the salsa and form it into patty.


Then, we have to steam the patties and then let it cook half cook. Then batter with egg white and bread crumbs for two times, so that the texture will be crunchy. Lastly deep fry the patties until it turns golden brown.

Results!!

The patties turned out to be crunchy on the outside and juicy in the center. Once you bite the patty. you can tastes the juicy taste of mango in your mouth and then a taste of spicyness of bird eyes chili combine with the taste of the mango and the meat.

Now that our patties succeeded, we think of making something like a bread ingredient. With that, we are thinking of turning it into a burger and another choice is Tako which is one of the Mexican dishes. That is a slice pita bread toasted added with some condiment. Well we are thinking of making a homemade pita bread. So catch us again next week and we will make you surprise.

Beef Chicken pineapple nugget





RECIPE
Main Ingredient=

  • Chicken breast 250 g

  • Tender loin 250 g

  • Salt to taste

  • Black Pepper powder to taste

Salsa=

  • Onion (diced) 3nos

  • Pineapple (diced) 1nos

  • Bird eye chili (chop) 5nos

  • Asparagus (sliced) 1 packet

  • Salt to taste

  • Black pepper powder to taste

Batter=

  • Egg 4nos

  • Bread crumbs 250 g

Method
First of all marinate chicken and beef with Garlic, Salt, Black Pepper powder. Let it marinate for at least ½ hour to make the ingredient to get in the meat. In the mean time, prepare the salsa ingredient. Prepare a pot of boiling water, add in salt and then blanch asparagus. After that mix the entire salsa ingredient together and placed aside. Next, blend the marinate meat ingredient and then make the meat into small ball. Flatten the meat with your hand and take the salsa and placed the salsa on the meat. Cover the salsa by pressing meat with your finger and then steam the meat for a few minutes (note: don’t make the meat to thick and don’t steam so long or else it will turn out hard). Once steam placed the meat in the egg batter and then sprinkle bread crumbs on the nugget. Make sure to bath in the batter for two times, so that the outside texture will turn out crispy. Lastly, deep fry the nugget until it turn golden brown.



Our first trial

As usuall we, prepared all the item and then do some misen-plus. Later that blend and season the meat. Next after that we prepare salsa and following the steps. By blanching asparagus and then chopped them to small cube follow by the onion. Pineapple is also chopped to small pieces And then mixes with lime juice. After making salsa, place the salsa aside and then start shapping the meat into small ball. Then place filling in the meat and then close back again. After that steam the meat until half cook. Finally deep meat into the egg batter and then to the bread crumbs before frying it.

After that, we learn that the meat texture taste isn't salty enough. But so far the texture is alright.

So we came out a solution to marinate the meat before cooking them.



We also try freezing the nugget, trying to find out what will happen to the nugget.


Other comment:

We had learn that the filling is satisfying this time and it was better than last week. We learn that the meat should be thinner so that the texture won't be so hard. Pineapple filling was our subtitue ingredient because we had forget to order some manggo. Well at least we know that this time the nugget will pass.
